Smaller turkeys cook well and dry out less so once you're beyond about 14 or 14 people consider picking up two small turkeys such as to 10 or 11 pounders instead. Everyone loves <a href="http://www.artwoo.com/tag/thanksgiving+leftovers" rel="tag">Thanksgiving leftovers</a> so don't worry about the extras.<br><br>If you need a fresh turkey (I always do) connect with your store in advance (like now) and pick it up a couple of days in advance. Put it on the <a href="http://www.artwoo.com/tag/bottom+shelf" rel="tag">bottom shelf</a> of your refrigerator in a tray to collect any juices.<br><br>If your turkey comes frozen also buy a couple of days in advance and allow to thaw in the refrigerator (again bottom shelf) never thaw meat on the counter.<br><br>Set Up<br><br>A note on brining<br><br>I love to brine my turkeys. Before brining I honestly did not like Thanksgiving Turkey that much and just ate teeny pieces. Now we have discovered brining these last 5 years and wouldn't go back.<br><br>Brining is to soak the meat in a sugar and <a href="http://www.artwoo.com/tag/salt+solution" rel="tag">salt solution</a> for a period of hours. The meat absorbs the solution and cooks up faster and more flavorful than otherwise.<br><br>If you're planning on brining your turkey this year you will need a fresh turkey. Kosher or <a href="http://www.artwoo.com/tag/frozen+turkeys" rel="tag">frozen turkeys</a> have already been treated with a salt solution and you will end up with something not so good if you attempt to brine one of these.<br><br>So make sure you get a turkey that has not been treated with a salt solution. You will have to set that up the night before (12 to 14 hours in advance). Remove the <a href="http://www.artwoo.com/tag/turkey+giblets" rel="tag">turkey giblets</a> and neck from the turkey and rinse it well.<br><br>A roasting pan with a V shaped rack works well if you tend to rotate your turkey during the baking.<br><br>Some will insist on starting the turkey on the breast so that the juices flow downward first and it turns out less dry.<br><br>Bake your stuffing in a separate pan outside of the turkey. The turkey cavity is that last to cook and the stuffing is in danger of not cooking through with raw turkey juices in it.<br>Using one of those meat roasting bags is a great idea if you are concerned about your turkey drying out. I have used them with great success. Follow the directions and never give up your secret.<br><br>Make sure you have fresh spices on hand. Sage, and thyme are two I cannot do without.<br><br>Baking<br><br>Use a meat thermometer so you never wonder if your turkey is done.<br><br>If you notice your skin getting too dark then use foil to keep it from over browning. The definition of indirect cooking is where the heat is not directly applied to the turkey as opposed to a grill where the turkey is seared directly over the <a href="http://www.artwoo.com/tag/charcoal+barbecue" rel="tag">charcoal barbecue</a> grill. <br /><br /> In my house it's always down to me to cook the turkey for Thanksgiving or Christmas and every year I read a bucket load of recipe books and everyone says something different. My biggest complaint is that most of the <a href="http://www.artwoo.com/tag/voices+of+authority" rel="tag">voices of authority</a> for traditional cooking out there always overdo it and the breast is dry however there is a way to keep the turkey moist and this is why I go for indirect cooking on a barbecue smoker. If a direct <a href="http://www.artwoo.com/tag/barbecue+grill" rel="tag">barbecue grill</a> is however your thing then you'll be better going for turkey <a href="http://www.artwoo.com/tag/grill+recipes" rel="tag">grill recipes</a> and choose some sliced breast. <br /><br /> Don't be tempted to go overboard looking for additional flavourings, the smoker will impart all the flavour you need so there's not much more to add than the basic seasoning, the real challenge is to keep the turkey moist through the cooking process. If you, go for a relatively small bird around 9 =96 12 lbs (5 or 6kg) you'll make life easier for yourself, after that, try my two tips:- <br /><br /> Melt 100g / 4 oz of butter in a pot and add a tablespoon of oil =96 this baste will give all the flavour of the butter without burning it. In addition I like to part the skin from the flesh by gently sliding my hand up from the neck and smear some butter up there but if you do fancy trying this, do be gentle so that you don't break the skin. <br /><br /> The second technique I use is to inject the turkey with the butter / oil mix. Use a meat injector (essentially a syringe with a metal capillary attached =96 as opposed to a needle), gently suck up the butter oil mix and then inject it carefully into the breast. Then it's just a matter of seasoning with salt and pepper and basting and then <a href="http://www.artwoo.com/tag/place+breast" rel="tag">place breast</a> side up on the <a href="http://www.artwoo.com/tag/bbq+smoker" rel="tag">BBQ smoker</a>. <br /><br /> You may be able to get away with a large kettle barbecue but essentially an offset smoker or a kamado barbecue such as a Big Green Egg is ideal. After that is just medium coals and indirect heat @ 225=B0F or 110=B0C, a drip tray in the bottom with a couple of tablespoons of water and you're well on the way. It may be necessary to use foil to shield the sides but that really depends on your barbecue. Just cover and baste every 30 minutes or so with the butter / oil mix and 3=BD hours later you should have the perfect Thanksgiving barbecue turkey. <br /><br /> The best test for me is not how long it's been cooked but a skewer test for clear running juice in the breast and legs or a thermometer and look for an internal temperature of 165 =B0F. Some of us are traditionalists, who shudder at the thought of anything but turkey with all the trimmings. Others are more adventurous -- especially me, since I did not grow up in the United States and I am not beholden to memories of Thanksgiving Past. I am always ready to try something new, and I believe (much to the fury of the traditionalists) that Thanksgiving is a great time to experiment with the menu. <br /><br /> And so it came to pass, last year, that <a href="http://www.artwoo.com/tag/i+won" rel="tag">I won</a> the fight about the <a href="http://www.artwoo.com/tag/thanksgiving+menu" rel="tag">Thanksgiving menu</a>, and, with the reluctant approval of the traditional family members, was given a free rein in the kitchen. And that's how the andquot;turduckenandquot; Thanksgiving began. <br /><br /> What's a andquot;turduckenandquot; you say? It was quite a task but well worth the trouble. I started the Wednesday before Thanksgiving by purchasing a 12 pound <a href="http://www.artwoo.com/tag/organic+turkey" rel="tag">organic turkey</a>, a 6 pound duck and a 3 pound fresh chicken. I <a href="http://www.artwoo.com/tag/carefully" rel="tag">carefully</a> boned each one leaving their structure intact. You must cut carefully, especially the turkey, if it is to look natural. <br /><br /> I made a stuffing from the giblets of all three, adding some sage, thyme, <a href="http://www.artwoo.com/tag/dried+apricots" rel="tag">dried apricots</a>, and <a href="http://www.artwoo.com/tag/grand+marnier" rel="tag">Grand Marnier</a>. I had a little Grand Marnier too... (not recommended if you're under 21!). The first thing you do is lay the turkey out, skin-side down, open. You then put down an even layer of the stuffing, careful to not go too close to the edges. Next, you lay open the duck skin-side down right on top of the layer of stuffing. It is smaller so you can put a good layer of stuffing on it. Simply repeat the process with the chicken. <br /><br /> Now, the tricky part... You carefully wrap the turkey back up into its original shape, tying the drumsticks, breast, and rear together. You cover it and bake it slow and low until the  innermost temperature is 165F. Be sure to baste often and remove fat as well. The duck is quite fatty. Leave it covered until the last half hour or so. You can remove the foil and it  will turn a nice golden brown. Let it rest for a half hour before carving. You may want to rest a little bit yourself,  also. <br /><br /> The big surprise comes at the table when you proudly stand to carve the 'turkey.' The good news is there is no correct answer. Turkey pairs well with <a href="http://www.artwoo.com/tag/red+wine" rel="tag">red wine</a> or white wine depending on what you and your guests like. Turkey is adaptable and the way it's prepared as well as other dishes to the meal really dictate what wine to pair it with. <br /><br /> If you are a red <a href="http://www.artwoo.com/tag/wine+drinker" rel="tag">wine drinker</a>, try a <a href="http://www.artwoo.com/tag/pinot+noir" rel="tag">Pinot Noir</a>. Putting the Pinot Noir in the refrigerator for about 20 minutes before serving it will bring out the fruit and will take away the 'bite' that alcohol can give when served at room temperature. A couple of good brands <br /><br /> If you like white wines, try a Chardonnay or even a Pinot Gris. This is where the turkey is really adapatable. Almost any good white will work, but stay away from the sweet dessert style whites. Light and <a href="http://www.artwoo.com/tag/crisp+chardonnay" rel="tag">crisp Chardonnay</a>'s along with most Sauvignon Blanc's will work.. If you want to be a little more adventurous, include a Viognier. It has a floral, peach, apricot, pear, fruity flavor and is m edium in body. <br /><br /> <a href="http://www.artwoo.com/tag/sparkling+wine" rel="tag">Sparkling Wine</a> also works as well, and brings a festive note to the meal. There are some powerful, yet affordable brut Champagnes that have sufficient weight and structure to stand up to a rich meal. Again, stay away from the sweeter Champagnes. <br /><br /> If you want to enjoy something special, try a Beaujolais. Every year in November, Beaujolais Nouveau ("new Beaujolais") is the first wine to be harvested in the Beaujolais region of France. Made from the Gamay grape, this wine is fresh, fruity, light-bodied and has hints of cherry and plums with peppery finish. It complements holiday fare well, and as it can be enjoyed slightly chilled, it can be enjoyed by those who favor a white wine. <br /><br /> Try one and tell me what you think!
