It seems so complicated and time consuming to mix all that stuff and season it and boil it and get it just right. And we don't know how. We go to a fancy restaurant, and the sauces are so delicate and beautiful, and they are in French, and we know we could never make something like that. Oh, yes, it's fear and our lack of knowledge that keeps us from enjoying sauces on our home-cooked food. <br /><br /> It really isn't as difficult as you think to make sauces, though. Once you know about the different kinds of sauces and master a few basic techniques, you can easily make sauces at home. You can even begin to invent your own sauces, based on your personal preferences and the things your family likes best. <br /><br /> Sauces make your food look, taste and smell better. They make food more <a href="http://www.artwoo.com/tag/appetizing" rel="tag">appetizing</a>. The difference between a Ham and Egg McMuffin and <a href="http://www.artwoo.com/tag/eggs+benedict" rel="tag">Eggs Benedict</a> is the <a href="http://www.artwoo.com/tag/hollandaise+sauce" rel="tag">hollandaise sauce</a>. And it is a big difference, isn't it? In the same way, sauces can turn your plain and simple cooking into something special. <br /><br /> Sauces add flavor to bland foods, like rice and pasta. Think <a href="http://www.artwoo.com/tag/alfredo+sauce" rel="tag">Alfredo Sauce</a>, <a href="http://www.artwoo.com/tag/marinara+sauce" rel="tag">Marinara Sauce</a>, Soy Sauce. Sauces also make dry foods moister and easier to eat. <br /><br /> Before refrigeration, sauces were used to mask the flavor of tainted food. Although it's not recommended that you serve tainted food, a good sauce can still mask the flavor of undesirable food. Kids are more likely to eat broccoli with cheese sauce than without, right? For those of us who are somewhat...indifferent cooks, a good sauce can sometimes mask a cooking mistake, too. Like, perhaps, rice that is just a tiny bit scorched. Served by candlelight and with a nice hollandaise sauce, no one will ever know. <br /><br /> Categories of Sauces <br /><br /> There are all kinds of sauces. Ketchup is a sauce. Salsa is a sauce. Vinaigrette dressing is a sauce. For our cooking purposes, though, there are four main categories of sauces. <br /><br /> Sauces made from stock - Stock is the liquid that remains after you cook things in water. The water retains the flavor of whatever was cooked in it, and is used to flavor other dishes. Stock can be thickened or reduced, or various ingredients can be added to it to make brown sauces, white sauces and pan sauces. <br /><br /> Sauces from roux - Roux is a mixture of flour and fat that is combined over low heat. Gravy is made from roux. <br /><br /> Sauces from emulsions - Emulsions are mixtures of liquids that don't mix. Mayonnaise is an example of an emulsion. <br /><br /> Combinations - Combination sauces are often made from roux and stock, as well as other ingredients. <br /><br /> Mother Sauces <br /><br /> In the 19th century, Chef Marie-Antoine Careme developed a system for cooking that relied on "mother sauces" or "grand sauces". Careme is considered the father of classic French cooking. His system was also used by Auguste Escoffier, another famous French chef. The five mother sauces provide the basis for other sauces that are used in classic French cooking. <br /><br /> Espagole is a reduced brown sauce made from cooking meat.  Veloute is white stock thickened with roux.  Bechamel is milk thickened with roux.  Hollaindaise or Mayonnaise is an emulsion made with butter or oil, egg yolks and lemon juice.  Tomato Sauce is tomato sauce. <br /><br /> This all sounds very complex, but it is not. Once you know how to make a nice roux, and how to make stock, you can make hundreds of different sauces. Once you can make the five mother sauces, your sauce repertoire is practically unlimited. <br /><br /> Here are some examples: <br /><br /> Cheese sauce is béchamel sauce with grated cheese added.  Gravy is a roux made from pan drippings and espagole or milk.  Cream sauce for vegetables is veloute with a few herbs tossed in. <br /><br /> But you don't have to tell your family and guests that it's cheese sauce or whatever. Instead, you can serve them "steamed broccoli with a light cheese béchamel" or "steamed vegetables in veloute sauce." <br /><br /> And the list can go on and on. Using sauces to make your home cooked meals look better and taste better does not have to be intimidating. By far, the most common procedure is the gastric bypass, which is done both open and laparoscopically. <br /><br /> In most types of gastric bypass surgeries done today only 50 cm of the intestine is allowed to function in normal fashion. <br /><br /> How is the gastric bypass surgery different than the LAP-BAND? Generally, gastric bypass patients stay in the hospital one to two days following surgery, and recovery takes approximately one to three weeks. (French term for sauce chef) <br /><br /> Professional chefs go to culinary school for years to learn the secrets of making classic <a href="http://www.artwoo.com/tag/french+sauces" rel="tag">French sauces</a> and the more modern sauces derived from them. So what are we supposed to do? <br /><br /> Yes, there are some sauces that require strong cooking skills. Making a <a href="http://www.artwoo.com/tag/hollandaise+sauce" rel="tag">Hollandaise sauce</a> with butter and egg yolks is difficult because so many things can go wrong but with a little practice and a lot of focus, anyone can make a decent Hollandaise. <br /><br /> Mayonnaise is another emulsion sauce that many cooks imagine is too hard or two much work to prepare but nothing could be further from the truth. Mayonnaise is oil, egg, vinegar, condiments and spices. Again, all it takes is some skill with a whisk, the right ingredients and some patience. <br /><br /> Then there are the <a href="http://www.artwoo.com/tag/butter+sauces" rel="tag">butter sauces</a> that scare a lot of new cooks. When we hear "beurre blanc" sauce we automatically think, "This is going to be hard" but truth is they are easy if you start with well chilled butter, keep the heat low, add butter a little at a time, stay focused and serve immediately. <br /><br /> <a href="http://www.artwoo.com/tag/white+sauces" rel="tag">White sauces</a> including Allemande (German sauce), Supreme, and Normande are a little tricky because they all start with a chicken or fish base called veloute and then other ingredients are added to give the sauce its flavor. Veloute is simple a white stock that has been thicken with a white roux. <br /><br /> Let's back up for a second. A stock is a flavored broth that has been extracted from meats, fish, or vegetables by cooking them in water slowly for a period of time. A white stock is made with meats, chicken, fish or vegetables that have not been browned and are pale in color. <br /><br /> For example, simmering the carcass of a chicken along with some <a href="http://www.artwoo.com/tag/aromatic+vegetables" rel="tag">aromatic vegetables</a> can make a white <a href="http://www.artwoo.com/tag/chicken+stock" rel="tag">chicken stock</a> but to make a brown chicken stock, you first roast or brown the carcass. <br /><br /> A roux is a mixture of flour and fat that is cooked together and used to thicken soups and sauces. Depending on how long you cook the roux will determine if it called a white roux (the lightest), a blond roux or a brown roux. <br /><br /> So the veloute, a combination of the white stock, butter and flour, is the base or start to most of the classic white sauces. For sauce allemande you add egg yolks and mushroom cooking liquid. For sauce supreme, heavy cream, mushroom cooking liquid and some more butter. <br /><br /> Are they difficult to make at home? Absolutely not! They just take time, patience and focus. The ingredients are readily available whether you make your own homemade stock or purchase a good quality commercial brand. <br /><br /> As for tools, all you need is a heavy bottomed saucepan and a whisk. Professional chefs will typically strain their veloute and sauces through a fine strainer called a chinois but it's  not absolutely necessary. A common household strainer with small holes will work too. <br /><br /> When we start talking about brown sauces, here's when many new cooks start to get nervous. Just thinking about making "the gravy" at Thanksgiving gives some cooks the yips so how are they suppose to make a classic brown sauce like bordelaise or chasseur? <br /><br /> These sauces are all derived from the same base called demi-glace or some form of meat stock reduction. If you can get your hands on some demi-glace by either making it yourself (very time consuming) or purchasing a good quality product on the market, making any of these classic sauces is not difficult at all. <br /><br /> For example, the classic bordelaise sauce is basically shallots, wine, fresh thyme, butter, parsley and demi-glace. Chasseur sauce, also called hunters sauce because it goes well with wild game, is a combination shallots, mushrooms, butter, white wine, sometimes tomatoes and demi-glace. <br /><br /> If you go any high-end restaurant's kitchen, you will most likely find some form of demi-glace or other meat stock reduction cooking on the stove. Culinary students are taught first thing about making stocks and their reductions. They spend hours making them day after day because they are the basis for all classic French sauces. <br /><br /> This doesn't mean you can't prepare these same sauces at home to serve with your chicken, veal, beef or fish. All it means is you have to find a quality commercial product, know someone in the restaurant business or spend the time to make a batch yourself. <br /><br /> A weekend spent preparing a good demi-glace will give you enough to last quite a while. Because these sauce bases freeze so well, you can have rich sauces year round or you can find a classic recipe at <a href="http://www.gatewaygourmet.com/demi_glace.htm" >http://www.gatewaygourmet.com/demi_glace.htm</a> to try at home. <br /><br /> If you not excited about making it from scratch, there are sources listed at the same site for manufacturers who are making restaurant quality demi-glace for both home users and  commercial establishments. <br /><br /> Either way, making restaurant quality sauces at home is not as difficult as you might have thought. The myth that only professional chefs with years of experience can prepare classic sauces is not true. Since then gastric banding has grown rapidly in popularity. <br /><br /> The laparoscopic adjustable gastric band is a form of restrictive gastric bypass surgery which many surgeons are beginning to favor as it avoids many of the nutritional problems associated with malabsorption surgeries. It also involves no cutting or stapling of the stomach and this, combined with the fact that the procedure can be performed laparoscopically, means that the death rate from surgery is about one-tenth of that seen in the widely used open Roux-en-Y form of surgery. <br /><br /> >From the patient's point of view the laparoscopic adjustable gastric band means a relatively short stay in hospital and a quick recovery. Once in place the band can also be adjusted without further surgery so that the surgeon has much greater control of patient management in the critical weeks following surgery, making it possible to react quickly and easily to problems which the patient might experience. <br /><br /> The laparoscopic adjustable gastric band procedure is also fully reversible and, after removal of the band, the stomach will return to its normal pre-operative state. <br /><br /> As with most restrictive forms of surgery weight loss tends to be less dramatic than in malabsorption or combination surgeries and patients have to work a little bit harder in the early months following surgery to achieve a satisfactory rate of weight loss. However, because weight loss is not quite so easy and patients have to learn a strict set of eating habits, laparoscopic adjustable <a href="http://www.artwoo.com/tag/gastric+band+surgery" rel="tag">gastric band surgery</a> tends to produce better long-term results and weight stability. <br /><br /> It is interesting to note that in Australia the vast majority of weight loss surgeries (over 90%) now involve the use of the laparoscopic adjustable gastric band. It is also significant that in one reported Australian study involving 2700 morbidly obese patients who underwent laparoscopic adjustable gastric band surgery not one single death has been reported which can be directly attributed to the surgery. This compares with Roux-en-Y surgery where, in a group of the same size, the average expected number of deaths would be in the region of 13 patients. <br /><br /> Laparoscopic adjustable gastric band surgery, like any other form of surgery, is not without its risks and complications and it would incorrect to conclude from this brief introduction to the procedure that it is a simple and routine procedure.     <content:encoded><![CDATA[Because of the many complications associated with the mini-gastric bypass weight loss procedure, it has been abandoned by nearly all <a href="http://www.artwoo.com/tag/bariatric+surgeons" rel="tag">bariatric surgeons</a> as unsafe. In fact, The American Society for <a href="http://www.artwoo.com/tag/bariatric+surgery" rel="tag">Bariatric Surgery</a> has determined that the procedure should never be performed. <br /><br /> The mini gastric bypass is done using a laparoscopic technique that avoids large scars and cuts down on operating time. However, this is still a very drastic procedure. The mini gastric bypass procedure is sometimes called the "Loop Gastric Bypass." <br /><br /> The surgery requires less time in the operating room than the more commonly performed Roux-en-Y <a href="http://www.artwoo.com/tag/gastric+bypass+surgery" rel="tag">gastric bypass surgery</a>. However, insurance companies consider the procedure "experimental" and rarely cover it because of its poor safety record. <br /><br /> The mini gastric bypass is "mini" only because the incisions are small when the surgery is done <a href="http://www.artwoo.com/tag/laparoscopically" rel="tag">laparoscopically</a>. The surgical changes are quite extensive. Common complications can send the patient back to the operating room, where large incisions may be required to repair internal leaks or remove infection. <br /><br /> Some debilitating complications associated with the mini-gastric bypass, such as <a href="http://www.artwoo.com/tag/bile+reflux" rel="tag">bile reflux</a>, can appear a year or more after the surgery, and may require a major operation to reroute the digestive tract. <br /><br /> During the surgery, a small portion of the stomach is surgically removed from the rest of the organ, and the lower portion of the new section is attached to the upper intestines below the pancreas. The larger portion of the stomach, which no longer connects to the esophagus, will remain in the abdominal cavity. Because only the smaller portion of the stomach is now used for digestion, and some of the intestinal tract is bypassed, patients eat smaller portions and nutrients are not well absorbed. This will lead to weight loss. <br /><br /> Studies have shown that the mini-bypass procedure creates a severe hazard in the event of any leakage after surgery. It also seriously increases the risk of ulcer formation, irritation of the stomach pouch by bile, and could increase the potential of esophageal cancer. <br /><br /> Many persons who underwent this procedure in the past have required major surgery to correct severe discomfort and life-threatening effects. <br /><br /> Some medical experts believe the type of surgical connection used in the mini gastric bypass procedure can cause biliary reflux gastritis and other complications, in addition to the complications that are common to other gastric bypass procedures. <br /><br /> The procedure resembles the Billroth II procedure, a surgical treatment for stomach cancer, which is no longer used because of safety concerns. <br /><br /> Studies have shown that the risks associated with gastric bypass surgery can be reduced (but not eliminated), by having your surgery performed at a fully approved ASBS Bariatric Surgery Center of Excellence (BSCOE). However, it will not be possible to find a Center of Excellence willing to offer the mini gastric bypass because of its poor safety record. <br /><br /> During a search on the Internet to find surgeons who perform this procedure, this author could find only one name - Dr Robert Rutledge of Henderson, Nevada. Dr Rutledge also contracts with surgeons in other states who perform the mini-bypass procedure on a fee-splitting arrangement with Dr. Rutledge. <br /><br /> Several press releases were found extolling the safety of the procedure, but these releases named Dr. Rutledge as the chief researcher.
