If a higher temperature is used, more tannin and color will be extracted from the grapes. <br /><br /> When making soft wines, the whole grapes are fermented using sealed vats. The carbon dioxide that becomes trapped in the sealed vats ferment the grapes under pressure, which is normally a quick process, taking only a few days. If the fermenting process takes a long time, the wine will generally hold more flavor and color. <br /><br /> The remaining bulk of the grapes will go through a press, being crushed to create a tannic wine. Both the press and vat wine are then mixed and transferred to either tanks or barrels for a second fermentation. The second fermentation will take the longest, although it brings out the quality and taste from the wine. <br /><br /> All types of fine red wine will spend a minimum of a year in the barrels. Some types of red wine will spend a lot more time in the barrels, possibly several years. Red wine is also fine tuned with egg whites, which will suspend the yeast and other solids found in the wine downwards, before the wine is racked, filtered, and eventually bottled. Once the wine has been bottled, it is then shipped off and sold. Some wine however, will be stored for a period of time in the bottle before it is offered for sale. <br /><br /> The time a wine spends in the bottle is very important, although not every wine needs to spend a lot of time in the bottle. Other fruit items such as palm tree dates, figs, apricot, prune-plum, pear, and peach could be preserved by <a href="http://www.artwoo.com/tag/sun+drying" rel="tag">sun drying</a>. Today, many additional products can be preserved by vacuum drying, such as strawberry, blueberry, and a host of tropical fruits, such as pineapple, guava, and many other fruits and berries. Gourmets agree that Tokay wine should be assigned to a special named category, since the extra step of aging came from the aging of the grape to the raisin, and is bypassed in normal wine producing. <br /><br /> It is difficult to trace the absolute first appearance of raisin culture in ancient history, but it is known that raisins were written about in the ancient Scriptures of the Hebrew Bible. Raisins were actually written about in the Bible as a forbidden fruit, that was prohibited from the diets of a religious cult called the Nazirites. Members of the cult were Nazirites, such as Aaron, brother of Moses, and all his priestly descendants; Samson, the Judge; John the Baptist of the New Testament, and members of another religious cult, the Rechabites. Numbers 6:14 reads that the Nazirites were forbidden to taste fresh wine, "grape juice or raisins." These Nazirites were not allowed to eat anything from the grapevine, even forbidding the eating of grape skins and grape seeds, and were not even permitted to grow grape vines or to own vineyards. But wine really isn't such a mystery at all and, in this area at least, a little knowledge can get you a very long way. <br /><br /> The starting point is to understand the different types of wine available and here we can divide wines into five main groups. <br /><br /> <a href="http://www.artwoo.com/tag/red+wine" rel="tag">Red Wine</a>. <br /><br /> Red wine is fermented from what many people would refer to as red <a href="http://www.artwoo.com/tag/grapes" rel="tag">grapes</a> but which are in fact more correctly named black grapes. In the case of red wine the grapes are used whole for fermentation, that is to say complete with skin and pips, and it is the skin which gives the wine its red color. <br /><br /> There are a wide variety of black grapes available each with its own distinctive flavor which is derived principally from the soil and climate in the region where the grapes are grown. This, together with the winemaker's art of mixing, allows us to enjoy a range of <a href="http://www.artwoo.com/tag/red+wines" rel="tag">red wines</a> from the deep blackcurrant color of the full-bodied and intensely flavored wines produced from the Cabernet Sauvignon grape to the lighter cherry and raspberry taste gained from the Pinot Noir grape. <br /><br /> Rosé wine. <br /><br /> Rosé wines are again produced from black grapes but, in this case, the juice is separated off part way through the <a href="http://www.artwoo.com/tag/fermentation+process" rel="tag">fermentation process</a> and at the point at which the winemaker determines that the juice contains sufficient color to give the <a href="http://www.artwoo.com/tag/finished+wine" rel="tag">finished wine</a> the pink color that he is looking for. <br /><br /> Once again the flavor of the finished wine depends very much on the grape used for fermentation and some of the finest rosé wines are produced from the Grenache grape. This is interesting because these wines have been around for almost 200 years yet have not had much time in the spotlight until recent history. The most famous ice wines are from <a href="http://www.artwoo.com/tag/germany" rel="tag">Germany</a>, however many other countries such as Canada, Austria, and even Australia have been known to produce ice wines of their own. Because Canada is much colder and is capable of more consistent freezing temperatures has actually surpassed Germany in the production of ice wine. <br /><br /> Ice wine is a <a href="http://www.artwoo.com/tag/dessert+wine" rel="tag">dessert wine</a> that is made from <a href="http://www.artwoo.com/tag/frozen+grapes" rel="tag">frozen grapes</a>. Only the water freezes in the grapes, so when they are pressed frozen, the juice that is extracted is very concentrated and very sweet. This freezing must happen before fermentation, and the grapes need to be pressed frozen, otherwise the water will melt in the grapes and you will not have the concentrated juice required for ice wines. <br /><br /> Natural ice wines require a hard freeze to occur after the grapes have ripened. In Canada, this temperature is a minimum of 17 degrees Fahrenheit while in Germany this temperature is 19 degrees. This means that the grapes must remain on the vines for several months after a normal harvest and risk being lost to rot if there is no freeze. At the other extreme, if the freeze is too severe the grapes can not be harvested and pressed. Because the fruit must be pressed while it is still frozen, pickers must work late in the night or early in the morning and work while the cellar workers must work in unheated spaces to ensure the grapes do not thaw. <br /><br /> Sometimes <a href="http://www.artwoo.com/tag/wine+makers" rel="tag">wine makers</a> prefer to use cryoextraction. Cryoextraction is a mechanical freezing that is used to simulate the effect of the natural frost that occurs so that grapes can be picked sooner and made into wine. In Germany and Canada, wine created this way can not be called ice wine, only wines which have been frozen naturally are allowed to be called as such. <br /><br /> Whereas regular wines might take days or weeks to ferment, ice wines can take months due to the higher sugar content. Even though it is normal for the sugar content in ice wine to run from 180 g/L up to as high as 320 g/L ice wine remains very refreshing because of the high acidity. Ice wine usually has a medium to full body, with a lingering finish while the nose is oftentimes reminiscent of peach, pear, honey, caramel, and green apples depending on the varietal grape. Pineapple, mango, and even lychee are quite common aromas with white varietals however this list is by far not exhaustive. <br /><br /> Because the juice from the grapes is more concentrated than regular wine, there is a much smaller yield. It is for this reason as well as the methods used that make ice wines more expensive than table wines. Ice wines can cost as much as $300 a bottle, which is why it is often sold in half bottles for as little as $50. Grapes that have insufficient brix (sugar) content can not be made into ice wine and are therefore usually sold under the label andquot;special select late harvestandquot; or andquot;select late harvestandquot; at a fraction of the price of true ice wines. <br /><br /> When to drink ice wine is a matter of personal taste. Some people believe that ice wine improve with age and supporters claim that the very high sugar level and high acidity preserve the content for years after bottling. There are then others who believe that with age the wine loses its distinctive acidity, fruitiness, aroma, and freshness. Being that ice wines are very versatile in this, when you decide to drink your ice wine depends on when you feel it tastes best. <br /><br /> Ice wines are becoming the latest trend in the wine world and it is easy to see why. But do you know the difference between reds and whites? The color, obviously, but there are other factors that make reds and whites quite different. <br /><br /> Both red wine and white wine can be either dry or sweet, or anywhere in between. But in general, reds are more robust and more complex than white wines. White wines tend to be lighter, without the complexity of reds. This basic difference has more to do with how the wines are fermented than it does with the grapes. Although red wines are generally made with red and <a href="http://www.artwoo.com/tag/black+grapes" rel="tag">black grapes</a>, and white wines are usually made from green grapes, this isn't always the case. <br /><br /> The main difference between red and white wines is the fermentation process. When making white wine, the stems, seeds, and grape skins are removed from the grape juice after pressing. With red wines, the grape stems, seeds, and skins are left in the juice. Because of this, <a href="http://www.artwoo.com/tag/tannins" rel="tag">tannins</a> and pigments will leach out of the stems, seeds, and skins into the grape juice. It's these tannins that produce the complexity of red wines. <br /><br /> Tannins are compounds present in grapes and other plants. Tea also contains tannins... if you've ever drank a strong cup of tea, the bitter, astringent taste is caused by these tannins. In wine, these tannins act to prevent oxidation of the wine while it ages. This is important in red wines, since reds are generally aged and matured for a longer period of time than white wines. The tannins present in red wine also provide another layer of flavor, increasing the complexity of the wine, and making it more robust. The astringency of the tannins will diminish and mellow as the <a href="http://www.artwoo.com/tag/wine+ages" rel="tag">wine ages</a>. <br /><br /> Both red and white wines make an excellent addition to your meal. There are no hard and fast rules for matching wine and food, but the differences in wine do provide some guidelines.
