Pour enough apple cider into the dish to cover the venison pieces fully. Place the dish in a refrigerator and allow to soak for two hours. <br /><br /> Remove venison from the cider and shake the pieces vigorously to free them of cider. Throw away the cider that is left in the dish. Wash the dish before putting the venison in it again. <br /><br /> Put the venison back in the dish and pour in the barbecue sauce generously -- so that it covers the venison fully. The dish should then be covered and returned to the refrigerator for two to three hours. <br /><br /> Remove the venison from the fridge and let it stand for half an hour in normal room temperature. Next, wrap bacon slices around each chunk of venison. Secure the with toothpicks to make sure that it does not fall off during grilling. <br /><br /> The venison is now ready to be barbecued. Heat the grill and brush some olive oil on the grill grate. Lay the venison packed in bacon on the hot grill. Roll the dough into a ball, place it under plastic wrap, and let it sit for 30 minutes. <br /><br /> While the dough is sitting, prepare the filling. Cut the bacon into small squares and place into a medium sized pan. On medium-low heat, cook the bacon until light brown. Add the onions and butter. Once the butter melts, drain the sauerkraut and add it to the pan. Stir in the sauerkraut thoroughly with a small fork. Reduce the heat to low and cover the pan. Let the sauerkraut sit for 20 minutes, stirring <a href="http://www.artwoo.com/tag/occasionally" rel="tag">occasionally</a>. <br /><br /> Now that your dough and filling is done, it is time to make the pierogi. Take a large piece of dough and, with a rolling pin, flatten it out on a table coated with flour. Cut out small, circular pieces of dough using a cookie cutter. With a teaspoon, scoop out a small amount of sauerkraut filling and put it in the center of the dough. Close the dough around the filling and pinch shut using your fingers and a small fork. Repeating this process should yield about 20 piergoi. <br /><br /> In a pot of boiling water, add the pierogi, five at a time. Let them boil for 2-3 minutes or until they float. Along with the corn harvest comes a big variety of other vegetables and dishes. <br /><br /> When you cut the corn from the cob, the possibilities for preparing corn are endless. You can add it to bread to make a wonderful spoon bread recipe, or a great Southern favorite, corn pudding. Corn combines well with other summer vegetables such as <a href="http://www.artwoo.com/tag/tomatoes" rel="tag">tomatoes</a>, bell peppers and onions. The secret to a great dish is to use the freshest corn available. The less time that passes between the garden and the finished recipe the better. <br /><br /> When you're selecting corn, choose ears with tight, green husks and tender milky looking <a href="http://www.artwoo.com/tag/kernels" rel="tag">kernels</a> that are evenly spaced on the ear and firm enough to puncture if you squeeze it a little. If you're not going to be preparing your corn immediately after you get it home, then buy it with the husks and put it in the refrigerator to prevent the sugar in the corn from turning to starch and tasting less than sweet. Layer half of tomatoes, green pepper, and corn over breadcrumbs; sprinkle with half of salt, sugar and pepper. Repeat layers of the veggies and seasoning. Combine the melted butter and remaining 1 c breadcrumbs, stirring well; spoon evenly over casserole. Top with remaining bacon; bake at 375 F for 40-45 minutes. First, cut the bread and bacon in half. Then, place salmon at one end of the bread, sprinkle with cheese, and roll up. Wrap a piece of bacon around the roll, and pin in place with a toothpick. When ready, bake at 400 degrees Fahrenheit for 15-20 minutes on an ungreased cookie sheet. I have had numerous conversations with people trying to tell me the foods that myself and my family eat which is completely contrary to what I know we eat. One of the biggest misconceptions is about "Corned Beef and Cabbage", this is not a common dish in Ireland at all. In fact it is generally confined to the small restraints in tourist areas to cater for the hoards expecting everyone living on the island of Ireland to be tucking into this on a daily basis. We do however have a dish similar to this, it is not eat very regularly and certainly not eat on Saint Patrick's Day or any other day of celebration. It is "<a href="http://www.artwoo.com/tag/bacon+and+cabbage" rel="tag">Bacon and Cabbage</a>", not the type of bacon that is fried but more like a ham which is boiled. So what will Irish people in (living in Ireland) eat on Saint Patrick's day. <br /><br /> The day is more than likely going to start out with an "Irish Breakfast" this comprising of fresh eggs normally fried along with 2 sausage, 2 bacon, <a href="http://www.artwoo.com/tag/grilled+tomatoes" rel="tag">grilled tomatoes</a>, black pudding, white pudding, mushrooms and <a href="http://www.artwoo.com/tag/irish+brown+bread" rel="tag">Irish brown bread</a>. Bacon in Ireland is back bacon and is meatier bacon than is sold in the United States, its closest equivalent being what is called <a href="http://www.artwoo.com/tag/canadian+bacon" rel="tag">Canadian bacon</a> in the US. And then there are the puddings, sold in packages the size similar to a salami. Black pudding is really a <a href="http://www.artwoo.com/tag/blood+sausage" rel="tag">blood sausage</a> which is a staple across the European continent. The French call theirs 'boudin noir,' the Spanish 'morcilla,' the Germans 'blutwurst,' and the Italians 'sanguinaccio.' Irish brown bread is sometimes made with oatmeal, but its unique taste comes from using the finest <a href="http://www.artwoo.com/tag/milled+wheat" rel="tag">milled wheat</a>. <br /><br /> This will see you right through the day giving you all the energy required to survive the hustle and bustle generated by the parades that spring up in all the towns and cities. After this and maybe a few <a href="http://www.artwoo.com/tag/pint+of+guinness" rel="tag">pint of Guinness</a> it's back home for dinner. Not what you imagine no corned beef and no cabbage, Saint Patrick's Day meal is generally a join of lamb roasted in the oven with rosemary and garlic. <br /><br /> Recipe: <br /><br /> Ingredients  lamb trimmings and chopped bones from butcher  1 head of garlic, halved horizontally  1 leg of lamb bone in, approx 2kg/4=BDlb  6 garlic cloves, halved  1 bunch fresh rosemary  15g/=BDoz softened butter  salt and freshly ground black pepper  seasoned vegetables, to serve <br /><br /> Method <br /><br /> 1. Preheat the oven to 220C/425F/Gas 7.  2. In the bottom of a roasting tin scatter the chopped bones, trimmings and garlic head.  3. Make 2.5cm/1in deep incisions in the lamb, into each incision insert the garlic cloves and rosemary sprigs.  4. Rub the butter over the lamb and place the leg on top of the bones, season and place in the oven for 1-1=BD hours (15 minutes per 450g/1lb for rare and 20 minutes for medium) turning over half way through.  5. Remove the lamb from the oven, season again and transfer to a tray to rest.  6. To make the gravy: place the roasting pan over a moderate heat to caramelise the lamb juices, this will take 2-3 minutes. Strain of any excess fat. Pour in 350ml/12fl oz cold water, reduce heat and simmer gently for 5 minutes. Strain through a sieve. Serve the lamb with the gravy and seasonal vegetables. <br /><br /> Served with creamed potatoes, roasted vegetable (that includes potatoes, carrots and parsnips) with peas and broccoli. The dessert is normal hot apple tart served with custard and cream. <br /><br /> Recipe: <br /><br /> Ingredients  For the apple compote  80g/3oz unsalted butter  600g/1lb 5oz Granny Smith apples, peeled, cored and chopped  80g/3oz caster sugar  1 vanilla pod, split lengthways, seeds scraped out <br /><br /> For the tart  flour, for dusting  250g/9oz puff pastry, thawed overnight in the fridge if frozen  6 Cox apples, peeled and cored  squeeze lemon juice  caster sugar, for sprinkling  Custard and whipped cream to serve <br /><br /> Later that evening, if you still have room, it will be Irish brown bread with cream cheese and Irish Smoked Salmon.     <content:encoded><![CDATA[ Few people know that many of <a href="http://www.artwoo.com/tag/william+shakespeare" rel="tag">William Shakespeare</a>'s plays were published <a href="http://www.artwoo.com/tag/posthumously" rel="tag">posthumously</a>. Virginia <a href="http://www.artwoo.com/tag/fellows" rel="tag">Fellows</a>' Shakespeare Code includes an <a href="http://www.artwoo.com/tag/intriguing" rel="tag">intriguing</a> discussion of works attributed to Shakespeare that appeared after his passing in 1616. Shakespeare had been dead for seven years when the First Folio of his collected works was published. This celebrated Folio edition contained 36 plays, half of which had never been seen before. According to Fellows, many of the previously unpublished plays "were entered into the Stationer's Register on November 8, 1623, just in time for publication" a little later that same month. <br /><br /> More fascinating still, a number of plays published previously were altered. There were deletions as well as new additions. Fellows writes: "In the First Folio, The Merry Wives of Windsor has twelve hundred more lines than it had in 1602, <a href="http://www.artwoo.com/tag/titus+andronicus" rel="tag">Titus Andronicus</a> has a whole new scene, and Henry V is double the length of the 1600 edition." <br /><br /> Given the fact that Shakespeare was long gone and had left not a single manuscript behind, legitimate questions arise: Who edited the old plays? Where did the new plays come from, and why were they written? <br /><br /> Fellows, a firm supporter of the theory that <a href="http://www.artwoo.com/tag/sir+francis+bacon" rel="tag">Sir Francis Bacon</a> rather than Will Shakespeare wrote the plays, looks to the field of <a href="http://www.artwoo.com/tag/cipher" rel="tag">cipher</a> writing for an answer to these questions. She emphasizes a fact that may provide a plausible link between the works of Francis Bacon and William Shakespeare. In October 1623, a month before the release of the First Folio, Bacon published a new Latin edition of his 1605 treatise The Advancement of Learning. In this revised and expanded edition, entitled De Augmentis Scientiarum, he openly discussed a method of code writing, the Bi-Literal Cipher, which he had devised when still in his teens. <br /><br /> Coincidence? Bacon advocates don't think so, and have used Bacon's own Bi-Literal Cipher to hunt for hidden messages in Shakespeare's works and a number of publications by several contemporaries that exhibited the same odd typesetting features as the First Folio. (For a detailed description of the Bi-Literal Cipher and quotations of deciphered materials on Bacon's hidden life as the unrecognized oldest son of Queen Elizabeth I, see Fellows' captivating book.) <br /><br /> Bacon's Bi-Literal Cipher requires a substantial volume of text: it's designed in such a way that for each encrypted letter, five "outer" letters are needed. Furthermore, cipher-sleuths such as Mrs. Elizabeth Wells Gallup concluded, rightly or wrongly, that only italic letters were used in the bi-literal cipher believed to be embedded in Shakespeare's works=97which would rapidly multiply the volume of outer or "enfolding" text needed to contain the hidden messages. Fellows reasons that this demand for extensive cover text could well account for the adding of sections to old plays and the production of new ones. <br /><br /> While this may be the case, I think it's only one of several possible answers, and by no means the most important one. The quality of the outer texts=97the plays themselves=97is simply too exquisite to have been produced merely for the benefit of hiding secret stories=97whose quality, if the various decoded segments are correct, is often inferior to the outer text. Let me offer another explanation instead: I believe that the plays were essential to Bacon's life work, which he summarized as The Great Instauration. <br /><br /> Early in his life, after much disappointment in the stultified state of learning he encountered at Trinity College, Bacon, the young genius, set himself to the monumental task of bringing about a scientific, literary and cultural revolution=97both in England and in the world at large. All his future research and writings contributed in one way or another to this all-encompassing goal. In 1620 he finally disclosed this vision for a new golden age of peace, prosperity and enlightenment in The Great Instauration, and a few years later he painted an enticing picture of this new kind of society in his little book The New Atlantis. <br /><br /> The method he conceived of to bring about the Instauration consisted of six parts or steps. The three first steps were dedicated to an inventory of the state of knowledge and to employing a new scientific method=97that of experimentation and inductive reasoning=97that would replace the fruitless dialectical reasoning prevalent at the time. His various natural histories were examples as well as components of the inventory process, and his classic Novum Organon=97the "New Method"=97explained the methodology he devised for this huge and far-reaching endeavor. <br /><br /> The fourth step, which he called "The Ladder of the Intellect," was the first in the next tier of the process=97that of attaining philosophical illumination. Bacon described this step as demonstrating the various insights and principles found in the first three steps "before the eyes" so that people could understand and absorb them=97such as in art, literature and hands-on education. He wrote: "For I remember that in mathematics it is easy to follow the demonstration when you have a machine beside you, whereas without that help all appears involved and more subtle than it really is." <br /><br /> Francis Bacon discovered the power of theatre when, at twelve years of age, he wrote and starred in a little play called The Philosopher King, performed before the Queen herself. He learned that drama was a moving, effective means by which philosophical and moral principles could be set "before the eyes" of rich and poor, educated and uneducated alike. Nitrates are used mainly to make fertilizer, explosives and glass while nitrites are used mainly as a preservative in foods. Both are naturally occurring in nature in our water, certain vegetables etc. and ingestion from normal nitrite/nitrates in nature are nontoxic, but can be very powerful poisons in larger doses and need to be strictly controlled.<br><br>But we still eat them, and why?<br><br>Because over the last thousand years, man has been using this as a preservative for meat, but so far, NO ONE has found a better solution! (Or if someone has, we don't know about it)!<br><br>It does several things for meat;<br><br>- It imparts a pink color and makes meat look more appetizing and fresh.<br><br>- It gives meats a smoked, cured flavor, that's why we love the taste of bacon so much. It has been tested in taste kitchens, and bacon not cured with nitrite/nitrates, fared very poorly in <a href="http://www.artwoo.com/tag/taste+tests" rel="tag">taste tests</a>, plus they were somewhat grey in color and most people equate that with bad meat (even though it is not).<br><br>- It prevents <a href="http://www.artwoo.com/tag/botulism" rel="tag">botulism</a> and controls the possibility of food poisoning.<br><br>This all sounds great and in all truth a little bit of nitrates in your diet is not going to have necessarily long term effects on your health, but if you eat <a href="http://www.artwoo.com/tag/luncheon+meat" rel="tag">luncheon meat</a>, hotdogs, sausages and bacon on a regular basis, that is a whole different story.<br><br>- According to the Environmental <a href="http://www.artwoo.com/tag/health+investigations+branch" rel="tag">Health Investigations Branch</a>, one of the problems with ingesting nitrates/nitrites is that it can cause the hemoglobin in blood to change to Met hemoglobin, and this reduces the bloods ability to carry oxygen. This can be particularly hazardous to infants and very small children as they are much more sensitive to nitrate/nitrites than adults. Ingestion of nitrates turns into nitrite when it comes into contact with saliva and then down trough the <a href="http://www.artwoo.com/tag/intestinal+tract" rel="tag">intestinal tract</a>. Adults can change nitrates to nitrites by about 5% while Infants can change them by 10% or more. For infants, the inability to carry the oxygen through the blood can cause what is called the "Blue Baby Syndrome" had has been known to cause brain damage and death. Adults can have symptoms such as dizziness, headaches, irritability and blue tones around the eyes, mouth, hands and feet.<br><br>- Meats that are preserved with nitrate/nitrites can cause the body to form nitrosamines which has been demonstrated to be carcinogenic. This occurs when the preserved meat has been heated such as cooking bacon or sausages. Tasty but potentially hazardous to your health. Some of the nitrosamines effect can be counteracted by ensuring that your body gets plenty of vitamin C and E and in fact some manufacturers are now adding these to their meats but alas, most are not.<br><br>When you eat certain vegetables like spinach, collard greens, kale, celery, lettuce etc., you will naturally be consuming nitrates, but there is a way to tell if it has been grown organically without fertilizers laced with extra nitrates. The organic vegetables will have a lot less of the bitter taste that you will find with conventionally grown vegetables. It is a good argument for getting kids to eat organic as you may find it a lot easier for them if they aren't so bitter tasting! How old is the science of smoking? Well no one really knows for sure but it's been around a lot longer than most evidence that documents it. I'm led to believe that there's a smoking pit in China that's believed to be 5000 years old so we can safely assume that it's been around for some time. <br /><br /> Traditionally <a href="http://www.artwoo.com/tag/food+preservation" rel="tag">food preservation</a> would have started with either curing or brining and then the smoking process would follow on. Nowadays with the advent of refrigerators, smoking and indeed brining or curing is more concerned with flavor rather than food preservation. For me and many people it's about having fun too, getting the best ingredients and taking time over preparing food is sadly in decline now that the pace of life is so fast. Life's too short, let's chill out and savor all that's to be experience with traditional food preparation. <br /><br /> Curing <br /><br /> Curing using smoke works well for both <a href="http://www.artwoo.com/tag/meat+and+fish" rel="tag">meat and fish</a>. The most common chemicals used for curing today include ascorbic acid (vitamin C) or <a href="http://www.artwoo.com/tag/sodium+nitrate" rel="tag">sodium nitrate</a> albeit ascorbic acid also preserves the color of the meat at the same time. In days gone by the preferred choice would have been <a href="http://www.artwoo.com/tag/potassium+nitrite" rel="tag">potassium nitrite</a> but essentially it's a salt. <br /><br /> Much has moved on from tradition with the quest to add flavor by curing so it's now common to include some sweet flavoring with the salt such as sugar, treacle, molasses etc or to spice it up with <a href="http://www.artwoo.com/tag/chili+powder" rel="tag">chili powder</a> or <a href="http://www.artwoo.com/tag/cayenne+pepper" rel="tag">cayenne pepper</a>. The fundamental point however is that curing is a dry process. <br /><br /> The curing process then can take many weeks or months and the end results are well worth it. The classic commercial curing that we see day in day out comes from curing belly pork and we end up with bacon. I get frustrated that even today there's so much water in commercially prepared bacon and if this isn't a reason to try home curing, I don't know what is. It's a fairly simple process too. <br /><br /> Ask your butcher for a pork belly or part of one depending on how big you want it. Rub the belly all over with a 75%:25% mixture of salt and brown sugar and add a bit of chili or cayenne to your taste. Place the pork belly in a plastic container and bung it in the fridge for 2 months. Be patient and you'll never want to buy commercial bacon again! <br /><br /> Brining <br /><br /> Brining is the wet process where we simply immerse the meat in a salt solution or brine - and that's it. It works well for salt beef, barbecue turkey and fish (salmon in particular) as a precursor to smoking and the basic method is outlined below. <br /><br /> The essential ingredient is the creation of a salt solution that is completely saturated. Stir salt into water until no more will dissolve, now heat it gently and see how much more you can get to dissolve. Divide into three or four portions and wrap with double thickness of tin foil. Place onto a medium to hot grill for about forty minutes, carefully moving occasionally. Open with caution and serve with some bread rolls. <br /><br /> Chicken In Foil: <br /><br /> Ingredients.  One small green pepper, chopped.  Half of a small red pepper, chopped.
