Along with the corn harvest comes a big variety of other vegetables and dishes. <br /><br /> When you cut the corn from the cob, the possibilities for preparing corn are endless. You can add it to bread to make a wonderful spoon bread recipe, or a great Southern favorite, corn pudding. Corn combines well with other summer vegetables such as <a href="http://www.artwoo.com/tag/tomatoes" rel="tag">tomatoes</a>, bell peppers and onions. The secret to a great dish is to use the freshest corn available. The less time that passes between the garden and the finished recipe the better. <br /><br /> When you're selecting corn, choose ears with tight, green husks and tender milky looking <a href="http://www.artwoo.com/tag/kernels" rel="tag">kernels</a> that are evenly spaced on the ear and firm enough to puncture if you squeeze it a little. If you're not going to be preparing your corn immediately after you get it home, then buy it with the husks and put it in the refrigerator to prevent the sugar in the corn from turning to starch and tasting less than sweet. If your recipe calls only for kernels of corn, remember that two average size ears will usually give you about one cup of corn kernels. <br /><br /> Here's a delicious summer corn recipe to try out this year. <br /><br /> Corn and Tomato Casserole <br /><br /> 8 slices bacon, cut in half  2 c soft <a href="http://www.artwoo.com/tag/breadcrumbs" rel="tag">breadcrumbs</a>  2 c peeled, chopped fresh tomatoes  1 med <a href="http://www.artwoo.com/tag/green+pepper" rel="tag">green pepper</a>, chopped  3 c fresh corn cut from cob   <a href="http://www.artwoo.com/tag/tsp" rel="tag">tsp</a> salt   tsp sugar   tsp pepper   c butter, melted <br /><br /> Place half of bacon in a shallow 2 qt casserole, and top with 1 c breadcrumbs. Layer half of tomatoes, green pepper, and corn over breadcrumbs; sprinkle with half of salt, sugar and pepper. Repeat layers of the veggies and seasoning. Combine the melted butter and remaining 1 c breadcrumbs, stirring well; spoon evenly over casserole. Top with remaining bacon; bake at 375 F for 40-45 minutes. You never know when you'll find a new family favorite! <br /><br /> GRILLED VENISON WITH BACON  Prep time: 6 to 7 hours  Cooking Time: 20 minutes  Serves: 4<br /><br /><br /><br /> Ingredients  2 lbs. <a href="http://www.artwoo.com/tag/venison+backstrap" rel="tag">venison backstrap</a> (tenderloin)  1 qt. apple cider  1 1/2 lbs. thick sliced bacon  2 12oz. bottles of barbecue sauce <br /><br /> Cut venison into 2 inch chunks and place in a shallow baking dish. Pour enough apple cider into the dish to cover the venison pieces fully. Place the dish in a refrigerator and allow to soak for two hours. <br /><br /> Remove venison from the cider and shake the pieces vigorously to free them of cider. Throw away the cider that is left in the dish. Wash the dish before putting the venison in it again. <br /><br /> Put the venison back in the dish and pour in the barbecue sauce generously -- so that it covers the venison fully. The dish should then be covered and returned to the refrigerator for two to three hours. <br /><br /> Remove the venison from the fridge and let it stand for half an hour in normal room temperature. Next, wrap bacon slices around each chunk of venison. Secure the with toothpicks to make sure that it does not fall off during grilling. <br /><br /> The venison is now ready to be barbecued. Heat the grill and brush some olive oil on the grill grate. Lay the venison packed in bacon on the hot grill. You can expect the bacon to cause flame-<a href="http://www.artwoo.com/tag/ups" rel="tag">ups</a>, but don't worry. Let it get slightly burnt. It adds to the smoked flavor. One was much larger than the other was so I assumed that she was the mother trying to feed her young. I couldn't believe that the small bird, a lovely little sparrow, was jumping up an down trying to put food in the mouth of this ungrateful screeching little big bird who did nothing but keep his mouth open and run around as if he wasn't getting enough to eat. The mother was exhausted from all this jumping about. I thought I'd give the mother a break and throw some breadcrumbs out there for them to share. Do you think the 'Baby' bird would feed itself - NO! It still waited for Mom to jump up and put the morsels in its mouth. If this were the real mother of this monster bird, then I would hate to see the father! I've heard of birds laying their eggs in 'foreign' nests but the least they could do is pick a surrogate mother their own size! <br /><br /> Since then I've been reading up on 'brood parasites' - that's what they call these deadbeat mothers who leave it up to other birds to raise their babies. The one most popular in the Americas seems to be the Brown-headed Cowbird which is a pretty big bird in comparison to the sparrow. To help out the sparrow I decided to go into real estate - wild bird real estate that is: bird houses and feeders, plus baths and fountains. This way the sparrow can move in a small holed birdhouse and not worry about a bigger bird coming in and laying its eggs for her to raise. She can bring up her own little sparrows the way nature intended.  <bio>After working for over 20 years in an office, (the place I witnessed the above) I decided to work at home and sell something I really like. To me there is nothing like the sound of birds chirping in the morning. Fruit and vegetables have been proven in all kinds of studies to make a significant impact on diseases like cancer and Alzheimer's. So...yeah. We don't believe in going on all the tormentuous, restrictive, often expensive diets out there; we do believe in making a daily effort to live healthier lives regardless of the size, shape or rubbery-ness of our <a href="http://www.artwoo.com/tag/hind+quarters" rel="tag">hind quarters</a>. <br><br>We're saying: Live life. Love yourself. And do the darn best you can with the eating thing. We're not going any further than that and don't push us or Janette will bite back. But for now we leave you with one of her favorite recipes to prove that eating your vegetables isn't so hard after all.<br><br>Janette's Spinach Baseballs in a <a href="http://www.artwoo.com/tag/whole+wheat" rel="tag">Whole Wheat</a> Mitt<br>Ingredients<br>BASEBALL "GLOVES":<br>4 whole wheat pocket-less pitas<br>Vegetable cooking spray<br>Salt and pepper<br> teaspoon red pepper flakes<br><br>SPINACH "BASEBALLS":<br>1 cup Italian breadcrumbs<br> <a href="http://www.artwoo.com/tag/teaspoon+nutmeg" rel="tag">teaspoon nutmeg</a><br> cup grated parmesan<br>1  teaspoons salt<br>1 teaspoon freshly ground pepper<br> medium white onion, finely chopped<br> red pepper, seeded and de-veined and finely chopped, <br> cup chopped fresh basil<br>1 Portobello mushroom, stemmed, cleaned and finely chopped<br>1 pound fresh spinach, steamed and well squeezed and chopped<br>5 egg whites<br>2 cups spicy Marinara sauce, such as Classico, heated<br><br>Pre-heat oven to 350 degrees F.<br><br>TO MAKE THE BASEBALL "GLOVES":<br>Using your hand for a model, cut each pita loaf into the shape of a baseball glove, separating each finger. Place each in small oven proof bowl and push down in center to conform to the shape of the bowl. Spray the top of the pita with vegetable spray, sprinkle with salt, pepper and red pepper flakes. Bake for approximately 10 minutes. Remove from oven and let cool before removing from bowl. <br><br>TO MAKE THE SPINACH "BASEBALLS":<br>In a large bowl, combine the breadcrumbs, nutmeg, parmesan, salt and pepper. Add the onions, peppers, basil, and Portobello mushroom and toss until well coated. Mix in the well drained spinach and stir until fully incorporated. Mix in the egg whites.<br><br>Form into 4 large 'baseball,s' place on nonstick baking sheet and bake for 25 minutes.<br><br>To serve, place a spinach 'baseball' in each whole wheat mitt. Among the information that's handed out freely is your IP (Internet Protocol) address, generally in the form of four sets of numbers separated by periods, the country your ISP is located in, often times the origination of your TCPIP stack, which tells someone if you're on a Mac, PC or Linux box, your browser type used, and, because of browser caching for speedy access to previously hit sites, your browser history. <br /><br /> If your computer doesn't have certain functions turned off, it can be even worse. For example, unblocking the port of Windows Messenger (not to be confused with <a href="http://www.artwoo.com/tag/msn+messenger" rel="tag">MSN messenger</a>) will get your computer spammed with a thousand little gray boxes that all need to be turned off. Some computers and their TCP/IP stacks support finger and ident, which can reveal your personal information online. Even innocuous web sites that ask you for registration information can have that information intercepted and passed around. <br /><br /> If you're concerned about handing out your personal information on the web, be <a href="http://www.artwoo.com/tag/aware+that+there" rel="tag">aware that there</a> are ways to <a href="http://www.artwoo.com/tag/surf+the+web+anonymously" rel="tag">surf the web anonymously</a>. This cuts the trail of breadcrumbs and bits that lead potential identity thieves back to you.     <content:encoded><![CDATA[I never met <a href="http://www.artwoo.com/tag/clifford" rel="tag">Clifford</a> <a href="http://www.artwoo.com/tag/erickson" rel="tag">Erickson</a>. In fact, I never knew his name until I went to Carpio, ND to pay respects to his family.  Clifford B. Erickson died at his home in Carpio on June 26, 2006. My wife works for his daughter, Cindy, and they are close friends as well. They have even been mistaken for sisters.<br /><br /><br /><br /> While I never met Clifford, I did get to know him quite well while I was in Carpio. In fact, I'd say Clifford and I became good friends. A man leaves a trail of breadcrumbs across the prairie of life; visible clues about how he lived and how he died. We call that trail "Family," and in getting to know his family better over the two days prior to his funeral, Clifford I and developed quite a relationship. <br /><br /> I never set foot in <a href="http://www.artwoo.com/tag/north+dakota" rel="tag">North Dakota</a> until 1997, when I started to travel the "<a href="http://www.artwoo.com/tag/roughrider+state" rel="tag">Roughrider State</a>" for my work. I had not been to North Dakota for almost two years, however, and I had missed the places and the people. I have ties to North Dakota, as my mother grew up out west in Marmarth. So when I go out to the prairies, a piece of me feels like I am going home. When my wife and I went to Carpio, we certainly felt like we were home.<br /><br />We felt like we were with family. <br /><br /> Clifford was 96 when he died, leaving his beloved <a href="http://www.artwoo.com/tag/irma" rel="tag">Irma</a> behind.  They were married for 68 years. The two of them raised six wonderful children. The family grew with many sons and daughters-in-law, grandchildren and great-grandchildren. When we arrived in Carpio, we found this family in mourning and grief as you would expect, but also with a <a href="http://www.artwoo.com/tag/profound+joy" rel="tag">profound joy</a> for a life well lived. The stories and reminisces flowed, too numerous to be mentioned here. These stories told of a good life off the land, not easy, but filled with hard work and endless challenges, but also a life of <a href="http://www.artwoo.com/tag/unspeakable+joy" rel="tag">unspeakable joy</a> and love for one another. The result of the lives of Clifford and Irma is a family that has accomplished much... lives that have meaning. This family isn't perfect. No family is, but the stories of Clifford and Irma Erickson and their family is a story about what is right about North Dakota...about America. <br /><br /> Two of these stories tell a lot about why this family flourished. One involves the beginning of the day, and the other involves the end of the day. <br /><br /> The Erickson Farm is located at Donnybrook, just north of the highway. The farmhouse overlooks the Des Lacs Valley, and the view is majestic. Every morning, Irma would look out the window and say, "This is a day that the Lord has made. Let us rejoice and be glad in it." And having done so, she would begin her day of cheerful hard work as a farmer's wife and mother to her children.<br /><br /><br /><br /> Clifford built a beautiful operation. He was respectful of the land, and worked hard and long to support his family, and he loved his Black Angus cattle! The farming life is hard, but Clifford and Irma managed to raise those six children regardless of challenges that came their way. A comment that came up repeatedly from his family about Clifford was that he always made them feel special; he made each of them feel like they were his favorite. Clifford was a man of few words, but when he spoke, people listened. At the end of every day, he always ended it by speaking words that were dear to him. If the day was happy and productive, or one filled with hardship and problems, Clifford would always close it in thankfulness by reciting the Lord's Prayer. <br /><br /> This foundation of faith and hard work was what brought the family and friends back to Carpio to lay Clifford Erickson to rest. We learn from those that came before us. My hope for Clifford's family, and especially his grandchildren, is that they never forget that Clifford and Irma built their family on a foundation of love and faith, and they demonstrated that love and faith in all of their family traditions. Family traditions are the handiworks that knit the individual members and the succeeding generations into family, and result from the dedication of a father and mother to certain principles and ideals. By holding on to those traditions, and consciously creating traditions of their own, the grandchildren will insure the legacy of Clifford Erickson lives on.<br /><br /><br /><br /> Clifford, you did your work well; you were a good and faithful servant. Thank you for showing us how to be a husband and father. The recipes are based on flour and it generally requires the use of an oven. <br /><br /> The ingredients used in baking can be wide and varied, but there are several items that are included in most baking. These include: <br /><br /> Flour  Plain white flour -- is a blended wheat flour, used for all general baking.  Self-raising flour -- white flour with a raising agent (baking powder) added.  <a href="http://www.artwoo.com/tag/wholemeal+flour" rel="tag">Wholemeal flour</a> -- flour made from the entire grain. <br /><br /> Raising agents  Raising agents produce <a href="http://www.artwoo.com/tag/carbon+dioxide" rel="tag">carbon dioxide</a> and cause your baking to rise up and be light. <a href="http://www.artwoo.com/tag/bicarbonate+of+soda" rel="tag">Bicarbonate of soda</a> is a raising agent which, produces carbon dioxide when mixed with an acid. Baking powder is a mixture of bicarbonate of soda and tartaric acid which produces carbon dioxide when moistened. <br /><br /> Sugar  Different recipes call for different types of sugar. Each sugar should be used according to the recipe. Types of sugar include -- super-fine (caster), confectionery (icing), brown sugar, demerara and muscovado. <br /><br /> <a href="http://www.artwoo.com/tag/eggs" rel="tag">Eggs</a>  Eggs for baking include the yolk and the white. Sometimes they are used whole or sometimes they are required to be separated. Eggs are used as a binding agent in baking. <br /><br /> Fats  Fats give moisture and/or air to baking. A number of different oils can be used as well as butter, lard, shortening and margarine. <br /><br /> In the basic baking of cookies and cakes there are four main methods. These baking methods include:- <br /><br /> Creaming method  This is where the fat and sugar are "creamed together", using an electric mixer. This requires the fat at room temperature. It and the sugar are beaten until smooth and creamy. The eggs are then added and beaten lightly. The flour then folded in. Cakes made by the creaming method tend to keep well due to the amount of fat in the mixture. <br /><br /> Whisking method  This is when the eggs and sugar are first whisked together to form a foamy consistency. This technique entraps the air, which, when heated in the oven, expands and raises the cake. The flour is then carefully folded in. These cakes are known as sponge cakes and do not keep as well as creamed cakes. <br /><br /> Rubbing-in method  You either like doing this or you don't -- and I don't. Getting the butter and flour under my nails makes me wince. Anyway the rubbing-in method involves having the fat at room temperature and with your finger tips rub it through the flour until it resembles breadcrumbs. This method is used for scones, shortbread, rock cakes and tea breads. It results in a baked item less rich as the fat content is usually less. <br /><br /> Melting method  This is the method used to make moist, heavy cookies like flapjacks and cakes like gingerbread. The fat and sugar are heated until all are dissolved, before the addition of the eggs, flour, raising agent and any spices. These cakes keep well due to their high fat and sugar content. Best kept wrapped to maintain their moist texture. <br /><br /> One of the good things about baking, is that you don't need a lot of expensive equipment other than your oven. When using a new oven it often takes a few bakes to get to know what temperature it is really running at. <br /><br /> Other baking equipment that you will need includes:- <br /><br /> Baking sheet (tray)  This what you are going to cook your cookie on. <br /><br /> Baking paper (or silicone sheet)  I find this an absolute must. It saves on ruining things by sticking and makes cleaning up so much easier. Definitely, get yourself a roll of baking paper. <br /><br /> Baking Tins  A pair of sandwich tins are useful. A round tin or two is a must and a bar tin is good for a start. If you start doing lots of baking then you can acquire more shapes and sizes. <br /><br /> Muffin/Cupcake Tray  It is a good idea to get a muffin tray. Muffins and cupcakes are a great way to start baking. Use cupcake papers and this will help with washing up. <br /><br /> So there are the basics to baking. The upmarket Croatian islands of Hvar and Brac in particular have become magnets for the moneyed, as has the stunning bay of Kotor in Montenegro, which is also courting favour with yachtees who just can't help falling in love with Europe's most southerly fjord. <br /><br /> Montenegro <br /><br /> "The sailing potential in Montenegro is excellent,." says Caroline Hollingworth, Managing Director of UK-based property consultancy, Hollingworth and Taylor. "There are 117 beaches and coves to explore, caves, islands, a stunning fjord, and a host of historic town, but the current infrastructure in Montenegro has a long way to go before it matches what's on offer in Croatia, basically because it lacks marina. This is excellent news for investors looking for great commercial development opportunities." <br /><br /> Indeed, the Montenegrin government have exciting plans under way for new marinas in Budva, Bar, and Tivat - where they hope to build the largest marina on the Adriatic -- among many other much needed marinas along its stunning 294km coastline. <br /><br /> "Within our Tourist Masterplan, the government's aim is to rival the Balearics and the French Riviera for holidaymakers, and create upmarket tourism," says Dragoljub Markovic, MD at Morsko Dobro, the government agency in charge of ensuring the coast is preserved from over-development. "There's some way to go, but we're getting there." <br /><br /> As a result of Montenegro's burgeoning infrastructure, its increasing popularity as a tourist destination, pending EU accession expected by 2010, and successful adoption of the euro currency in 2002, these factors have created an excellent climate for investors, especially for sailors looking for an exclusive waterside property with its own boat mooring or private beach. <br /><br /> Property Prices <br /><br /> "Property prices have been rising on average at over 20% for the past 3 years and well over 50% in the hotspots," says Nick Shinner, MD of property consultancy ,Where on Earth. <br /><br /> Emerging Property Markets <br /><br /> Croatia, and Montenegro in particular, are still emerging markets, so you can get your millionaire's pad at a fraction of the price you'd pay in more obvious locations, like the South of France, yet still have the benefits of a Mediterranean lifestyle. "If you're happy to do some renovation work, you can find yourself a seafront property with its own boat mooring from €150,000, or your own plot of land with a beach from around €100 per square metre," says Dragovic of Hollingworth and Taylor. "Now is the time to buy, before Montenegro or Croatia join the EU and prices go through the roof." <br /><br /> So while your boat could be depreciating in value, albeit in one of the most beautiful places in Europe, you can offset it with an appreciating asset on dry land. Don't expect to find a mass of theme parks, high rises, easy parking or food that forgets to disguise its origins with breadcrumbs.     <content:encoded><![CDATA[ In the northernmost part of Andalusia, between Jaen and Ciudad Real, where Andalusia begins, we find a Natural Park, which is unequalled amongst the natural parks of Andalusia. <br /><br /> Its history is ingraved in its landscape, and is well illustrated in books and stories, in <a href="http://www.artwoo.com/tag/common+expressions" rel="tag">common expressions</a>, and also physically in the many archeological sites, paintings and sculptures found here. These, and the richness of nature in its rugged and hard terrains makes it a deserving subject for conservation. This natural and historical wealth is a heritage for the future. The Natural Park, with an area of 6.000 hectares, situated in the <a href="http://www.artwoo.com/tag/sierra+morena" rel="tag">Sierra Morena</a>, is one of the most spectacularly <a href="http://www.artwoo.com/tag/beautiful+landscapes" rel="tag">beautiful landscapes</a> that exist in Andalusia. For the hiker or tourist entering the park after the <a href="http://www.artwoo.com/tag/smooth+plains" rel="tag">smooth plains</a> of the central peninsual, the sudden <a href="http://www.artwoo.com/tag/dramatic+panorama" rel="tag">dramatic panorama</a> of the mountains and narrow passes is breathtaking. On the other hand, the hiker leaving the park finds that in the space of only a few kilometers these forceful montains are now behind him, and that suddenly a gentle, easy Castilian landscape lies ahead. <br /><br /> The area is is the pass between Andalusia and the rest of the peninsula. In few places is your entry and departure so well defined. A <a href="http://www.artwoo.com/tag/place+of+history" rel="tag">place of history</a>, a place full of rocky cliffs and crags, a frontier, and more, the list could go on forever with the ideals this place cojures up in the imagination. However, it is necessary to travel here to appreciate the range of images that can be seen in the changing vista from the highway. <br /><br /> In this area, the town of <a href="http://www.artwoo.com/tag/santa+elena" rel="tag">Santa Elena</a> can be found, a place which the visitor really should visit. Although this is inside a natural park of great ecological value, it has also been for centuries an axis of meeting points between Andalusia and Castilla-La Mancha. A strong sense of its special omportance is expressed in the history of this place. <br /><br /> The national park was formed by a large fracture in the surface of the earth where the slow erosion of the river has formed the great narrow passes through the slate of the Sierra and has broken up the uniformity of the Sierras, through which, in its course, leasds the Valley of the Guadalquivir. <br /><br /> Their position in the northern border of Andalucia, gives these mountains considerable rainfall. The combination of the natural form of the rocks and the rainswater endows this land with its vitality and vigor. With heights of more than 1.000 metres and because of he geological break between the Meseta and the valley of the Guadalquivir, a natural bioversity exists. <br /><br /> Any tourist will be more than rewarded by a visit there and will be able to observe in these forests the blend of holm oak, cork, gall oak, and pine, to mention only a few species among the natural wealth of this mountain range. Below the trees, is an undergrowth of mediterranean origin, with plants such as madrona bushes, mastic bushes, and myrtle. The wildlife living here include the wolf, the lynx, the deer, the wild boar and the marten, to name just a few. They have evolved here in perfect equilibrium in a rich diversity of species in spite of the proximity of human civilization. The skies, too, are worth more than a mere glance, as here you can observe such birds as the lion vulture, and the beautiful imperial eagle. <br /><br /> Access to the park is principally via the Motorway of Andalusia which leads te Santa Elena, from where your route can be decided. You can travel through some of the narrow passes of the River or by going on foot across the Arroyo del Rey (The King's Stream) or, perhaps, taking the road to the Aldea de Miranda del Rey (Village of Miranda del Rey). <br /><br /> Inside the park and just after crossing the pass in the north, is the zone of the Correderas. From here, the road going in the direction of Aldeaquemada leads to the interior of the sierras. On entering this area of natural beauty one should perhaps be prepared to pause and absorb at leisure the geological formations that nature has created. Deep ravines, stark, vertical faces and diverse eroded forms shape the landscape. <br /><br /> Speaking of areas of natural beauty, we must not forget that there are also those who consider this area to be a real hunter's paradise as well. For a long time this has been a major hunting ground where hunting practices have had an almost ritual fulfillment, Santa Elena and La Carolina being central to the practice. <br /><br /> Few natural places of this size can offer the tourist so much. Wildlife, hunting, spectacular views, as well as its own special historical features. Near Santa Elena is one of the jewels of Iberian archeology, the Collado de los Jardines (Collado of the Gardens). In the middle of the Sierras is one of the most interesting Iberian sancturies known, and nearby, an archeological site, The Cave of the Dolis with its valuable cave paintings. <br /><br /> Another place of interest to visit, though not within the park's borders, is the Paraje Natural (Natural Place) known for la Cascada de la Cimbarra (The Waterfall of the Cimbarra). It can be reached via the Motorway of Andalusia via Aldeaquemada or from Santa Elena which also leads to Aldeaquemada. <br /><br /> In mid sierra, due to the erosion of the strong hard slate, the River Guadalquivir appears to be completely enclosed, creating mighty cliffs, from where various waterfalls originate, the most spectacular being La Cimbarra. The combination of natural factors here make it a place to mark on the map as a must. The delicious meat of the mountain is also a rare delicacy due te the difficulty of the terrain.
