Can I use Dutch cocoa in all my recipes calling for cocoa? Understanding the difference in chocolate and how they are used is essential to baking. In this guide, we'll identify the characteristics of those chocolates used in baking. <br /><br /> Cocoa is the dry <a href="http://www.artwoo.com/tag/chocolate+powder" rel="tag">chocolate powder</a> derived from <a href="http://www.artwoo.com/tag/chocolate+liquor" rel="tag">chocolate liquor</a>. It comes in two types: natural and Dutch process. <a href="http://www.artwoo.com/tag/dutch+processed+cocoa" rel="tag">Dutch processed cocoa</a> is processed with an alkaline. It is slightly darker, smoother, and more easily dissolved than natural cocoa. In many recipes, natural cocoa and Dutch cocoa are not interchangeable. Natural cocoa is slightly acidic and will therefore chemically react with baking soda to create carbon dioxide bubbles and some leavening power. Dutch cocoa is slightly alkaline, will not react with baking soda, and must rely on baking powder for leavening. <br /><br /> Bitter (unsweetened) <a href="http://www.artwoo.com/tag/baking+chocolate" rel="tag">baking chocolate</a> is made from pure chocolate liquor. By specification, it must contain 50 to 58 percent cocoa butter though with inferior products, vegetable oil may he added. Depending on the producer, milk solids, vanilla, or salt may be added. I have a package in front of me that contains only chocolate and milk solids. <a href="http://www.artwoo.com/tag/unsweetened+chocolate" rel="tag">Unsweetened chocolate</a> has a bitter taste and relies on sweeteners in the recipe to make it palatable. <br /><br /> Sweet baking chocolate--bittersweet, semisweet chocolate--has sugar added. These products must contain 35 to 50% cocoa butter but may have as little as 15% chocolate liquor. Because unsweetened chocolate has twice the chocolate liquor, we prefer to use unsweetened chocolate in most of our baking.  Bittersweet and semisweet chocolate can be used interchangeably in recipes though there is a difference in flavor. Often, bittersweet is a more expensive chocolate and to many, a better, richer-flavored chocolate. <br /><br /> Milk chocolate is made with ten percent chocolate liquor. It contains a minimum of twelve percent milk solids. Because it has such a low percentage of chocolate liquor, rarely is it melted and added to batter or dough. <br /><br /> White chocolate contains no chocolate liquor but is made with cocoa butter. Historically, the FDA has not regulated the manufacture of white chocolate so you need to read labels carefully. If the product was made with vegetable oil instead of cocoa butter, it will not perform the same as a product with cocoa butter. <br /><br /> Chocolate chips are made with chocolate liquor with only minimal amounts of cocoa butter. Instead, they are made with vegetable oil and stabilizers to help them hold their shape. Without the cocoa butter, chocolate chips have a different taste and mouth feel. Chocolate chips will have a firmer set in puddings, pie fillings, and sauces than baking chocolate.     <content:encoded><![CDATA[When people think of chocolate no two people are the same<br><br>Most chocolates that people are familiar with are dark, milk, white, semi-sweet, and maybe sugar-free.<br><br>But there are so many more out there.<br><br>Take AERATED chocolate for instance. It usually dark or white chocolate where air bubbles are introduced to the chocolate as it is being made.<br><br>And then there is FILLED Chocolate. It is a chocolate that additives were added. Things like nuts, jelly pieces, dried fruits and even cereals.<br><br>As for Organic, it is made from the raw material that the farmers produce.<br><br>In the 1990's chocolates with a high content of cocoa became very popular in Europe. The content of cocoa was 40-60%. Now some producers make chocolate ranging from 70 to 85%. There are even some that contain 99%!<br><br>Here is a list of unknown or unimagined chocolates.<br><br>Raw or Roasted Cacao--- this the whole <a href="http://www.artwoo.com/tag/cacao+bean" rel="tag">cacao bean</a> minus the shell.<br><br><a href="http://www.artwoo.com/tag/cacao+nibs" rel="tag">Cacao Nibs</a>---this the broken up pieces of the bean.<br><br>Ground Cacao---as the name suggests it's the bean ground up.<br><br>It is the healthiest form of chocolate there is however it can be quite bitter to the taste.<br><br><a href="http://www.artwoo.com/tag/chocolate+liquor" rel="tag">Chocolate Liquor</a>--- Unlike what it's name may suggest there is no alcohol added. This how chocolate starts. Producers start by grinding cacao nibs into a liquid paste in which nothing is added. It has about 53% <a href="http://www.artwoo.com/tag/cocoa+butter" rel="tag">cocoa butter</a> at this stage.<br><br>Unsweetened Chocolate---this what people use to bake with. It is sometimes referred as pure or <a href="http://www.artwoo.com/tag/bitter+chocolate" rel="tag">bitter chocolate</a>. It contains at least 35% chocolate liquor. There is cocoa and sugar in various amounts. There really no difference between bittersweet and semi-sweet chocolate. Often times they are referred as dark chocolate. The chocolate bittersweet or semi-sweet (the type baked with) is sweetened by adding <a href="http://www.artwoo.com/tag/cocoa+liquor" rel="tag">cocoa liquor</a> without adding the cocoa butter.<br><br>Sweet Chocolate---this chocolate is sometimes mistaken for bittersweet. The reason being that it contains at least 15% chocolate liquor in which cocoa butter and sugar is added in various amounts.<br><br>Milk Chocolate: This chocolate contains at least 10% chocolate liquor then cocoa butter and sugar is added in various amounts then at least 12% milk, cream, or milk powder is added.<br><br>White Chocolate: technically isn't considered a type of chocolate since it doesn't contain chocolate liquor. But it must have at least 20% cocoa butter and 14% milk with sugar added in various amounts. No wonder my white fudge never turns out!<br><br>Cocoa powder--- is really cocoa powder or unsweetened cocoa.<br><br>Then the last on my list is Dutched Chocolate.<br><br>It is formed by washing cocoa powder in an alkali solution of Potassium Carbonate. This wash darkens the color and neutralizes acidity of the cocoa powder. Cocoa that is very alkalized is called Black cocoa. This is the chocolate used in Oreo cookies.<br><br>In short the use and types of chocolate just depends on the imagination of the producers. Then in turn the consumer who is using the chocolate. Well I can say for this, my imagination turned to making white chocolate fudge and as I stated earlier it didn't turn out. OH,well back to the drawing board. Wouldn't it be great to give chocolates and experience it with a wonderful wine? <br /><br /> Chocolate is not easy to pair. The general rule with all pairings is the wine should be sweeter than the food, and this applies to chocolate as well. Otherwise the taste will be sour and the finish will be unpleasant. We usually think of Champagne or a Red. But so does everyone else and it seems outdated. Plus the bubbles get in your nose and the red can really ruin the whole experience since there are more bad matches then good ones. <br /><br /> You can't go wrong with a <a href="http://www.artwoo.com/tag/dessert+wine" rel="tag">dessert wine</a> or port with <a href="http://www.artwoo.com/tag/fruity+flavors" rel="tag">fruity flavors</a> high with residule sugars. If you don't like <a href="http://www.artwoo.com/tag/sweet+wines" rel="tag">sweet wines</a>, Cabernets are a great alternative because a lot of them have a hint of cocoa, along with blackberries and spices. Make sure you don't grab an oakey Cabernet though as you will be disappointed. The oak doesn't work well with the sweetness of the chocolate and makes a bad match. <br /><br /> Don't forget too that there isn't just one type of chocolate. Dark, white, milk and semi-sweet chocolates all have different characteristics and require a wine that stands on it's own to the chocolate. A full bodied Zinfandel might work well with <a href="http://www.artwoo.com/tag/dark+chocolates" rel="tag">dark chocolates</a> while an orange fortified muscat could work well with white chocolates. There is no science to wine paring and the fun is in the experimentation. <br /><br /> Tips for Successfully Pairings Wines with Chocolate <br /><br /> Tip #1: The wine needs to be at least as sweet, if not a sweeter, than the chocolate you are having. Otherwise, the taste may quickly turn towards sour. <br /><br /> Tip #2: Match lighter, more elegant flavored chocolates with lighter-bodied wines and the stronger the chocolate, the more full-bodied the wine should be. For example, a <a href="http://www.artwoo.com/tag/bittersweet+chocolate" rel="tag">bittersweet chocolate</a> pairs well with an intense <a href="http://www.artwoo.com/tag/california+zinfandel" rel="tag">California Zinfandel</a>. <br /><br /> Tip #3: If you are experimenting with several varities of chocolates, work from light to dark. Rieslings (like Chateau St Jean), Muscats or dessert wines tend to hold up well to mild milk chocolates. <br /><br /> Dark Chocolate Wine Suggestions <br /><br /> Dark or bittersweet chocolates need a wine that offers a roasted, slightly bitter flavor itself, with perhaps a hint of its own chocolate notes. Cabs and Zinfandels have a history of perfecting the dark chocolate match, resulting in an unparalleled tasting combination. A Cabernet Sauvignon (try Beringers Port) or a Zinfandel will more than fill your chocolate pairing expectations. <br /><br /> So for Valentines Day go out and buy some chocolates, and a few bottles of wine, and see what works.     <content:encoded><![CDATA[In life, there are cycles of good and bad. Times when our lives seem joyful and easy, and times when we're struggling through what seem like endless difficulties. Then there are times when the two seem to co-mingle. These are the times I call <a href="http://www.artwoo.com/tag/bittersweet" rel="tag">bittersweet</a>. Perhaps you've had a bittersweet period in your own life? Usually it begins with something wonderful, followed immediately by <a href="http://www.artwoo.com/tag/something+awful" rel="tag">something awful</a>. You get a great promotion at work, then your spouse loses his or her job. Or you finally start making progress on your new <a href="http://www.artwoo.com/tag/fitness+regime" rel="tag">fitness regime</a>, and you pull a muscle, putting you out of commission for a week or two. A new baby is born into your family, and then a loved one passes away suddenly (or sometimes not so suddenly). <br /><br /> Currently, I find myself in a bittersweet period of my own. My husband and I recently purchased our first home. This has been a dream of ours for years, and we've worked hard to make it happen. Finally the dream came true, and we moved into our new home less than two weeks ago, eager to begin a new phase of our lives. <br /><br /> Then the hammer dropped. In the same week, we received news that two family members have been diagnosed with cancer. My husband's uncle, and my mother (who also just moved into our new home with us). <br /><br /> During the years I'd fantasized about what it would be like to have our dream of homeownership come true, I never expected a dark shadow to be cast over the joy of our <a href="http://www.artwoo.com/tag/new+situation" rel="tag">new situation</a>. Somehow, I thought it would be <a href="http://www.artwoo.com/tag/smooth+sailing" rel="tag">smooth sailing</a> once the hard work was done and we achieved our goal. <br /><br /> For the first few days after we received the bad news, I felt somewhat <a href="http://www.artwoo.com/tag/indignant" rel="tag">indignant</a> toward the powers that be. Yes, I admit, such thoughts are selfish, not to mention futile. Life doesn't work like that, and the universe doesn't revolve around our wishes. There will always be difficulties to work through, regardless of what else is happening in our lives at the time. We simply have to carry on, because there is nothing else to do. Still, I felt like a petulant child, pouting because pain, fear, and uncertainty had chosen this moment to knock on our door. <br /><br /> A few nights later I was feeling restless, unable to concentrate on anything. I was afraid for my loved ones, worried that the cancer may have spread, wondering what was going to happen. Finally I decided to sort through some still-unpacked boxes to take my mind off my worries. It was late and the house was silent and still when I crept out to the garage. I began quietly sorting through a box of miscellaneous items when a wave of weariness came over me, and I sat down heavily on a folding chair to collect my thoughts. In the grip of despair, I reached out with my heart and mind to the universe, seeking, asking for...something. Comfort? Strength? Reassurance? Guidance? I don't even know what I needed at that moment, I just reached out wordlessly from my soul, hoping to get a response that made everything all right again. <br /><br /> Suddenly my attention was pulled to an item resting just inside the top of the box I had been sorting through. It was the corner of a greeting card I had tossed into the box in the haste of packing. I reached out and pulled on the corner of the card, and as it emerged from the box, I saw that the front of it featured a bouquet of flowers and the words, andquot;thank youandquot;. A flood of warmth washed over me then, flowing through every fiber of my being, clearing my mind, lifting my heart, refreshing my spirit. Yes. THANK YOU! That was the answer I had been seeking. <br /><br /> There, in the cool, quiet garage, I finally understood that the dark shadow that had been cast over our lives didn't have to blot out our joy. This can be helpful to remember what has <a href="http://www.artwoo.com/tag/been+forgotten" rel="tag">been forgotten</a>, or to release emotional trauma from an earlier time. <br /><br /> NLP teaches us how and why the <a href="http://www.artwoo.com/tag/unconscious+mind" rel="tag">unconscious mind</a> has the ability to repress memories, which would occur particularly if the memory has some <a href="http://www.artwoo.com/tag/negative+emotion" rel="tag">negative emotion</a> attached to it, negative emotion, which the individual would be unable to deal wit. However, when the unconscious knows you are ready to deal with that emotion, it can represent <a href="http://www.artwoo.com/tag/those+memories" rel="tag">those memories</a> for resolution. <br /><br /> Sometimes, we can remember events from the past and continue to recreate the negative emotions that went with them. Age regression can be particularly useful in this area, in fact an NLP technique called Change Personal History, can help a person to change the way they represent their memories to themselves. This a technique which I often use in my Hypnotherapy and NLP Practice in Hertfordshire. <br /><br /> Due to the power of the unconscious, which is also responsible for creating the imagination, care and a gentle indifference must be considered when performing age regression using <a href="http://www.artwoo.com/tag/hypnosis" rel="tag">hypnosis</a> for <a href="http://www.artwoo.com/tag/traumatic+memories" rel="tag">traumatic memories</a> that have been forgotten. This is because the imagination may create scenarios which justify the feelings. These scenarios may be real memories, or they may not be. <br /><br /> When using age regression to remember more generic things that have been forgotten, e.g. loosing your keys, age regression in hypnosis can be a particularly useful tool. All of your memories are stored in the unconscious, so even if you cannot consciously remember where you left you keys, there is a part of you that knows. (And it will usually remind you as soon as you stop thinking about the keys!) Hypnosis in Hertfordshire can be used to retrace the steps taken just before the loss of memory, and ideomotor signals can be used as a direct way of communicating with the unconscious. Perhaps I am aware of the value of pictures because my father was a photographer and so I was raised around cameras and pictures all the time. I'm not sure, I just know that I am convinced that everyone would do well to make pictures a more prominent thing in their life. <br /><br /> I talk to many people who have trouble remembering the details of their childhood or of some of the most significant events of their lives. This saddens me greatly because I do not think that it has to be this way. I think that regardless of whether or not you have a lot of pictures from your past, anyone can start now to take pictures and make memories of their life from this point forward. <br /><br /> Taking <a href="http://www.artwoo.com/tag/memorable+pictures" rel="tag">memorable pictures</a> doesn't mean that you have to be a <a href="http://www.artwoo.com/tag/professional+photographer" rel="tag">professional photographer</a> or that you need to have years of experience. All you need to have is an eye for capturing the memories that happen everyday in your life. A great first step is to head out and get a couple of <a href="http://www.artwoo.com/tag/disposable+cameras" rel="tag">disposable cameras</a>. If you're surprised that I am encouraging you to get dispoable cameras rather than a andquot;realandquot; camera, then read on. I suggest this because disposable cameras are an easy and cheap way to begin practicing taking pictures.
