At one time it was said that there were more millionaires per head of population in Dundee then anywhere else in the world! <br /><br /> At one point, jute employed more people in Dundee then all the other industries combined. Then due to competition from Asia the jute industry slowly died a death. Now there are only a few people employed in the jute industry in Dundee. <br /><br /> <a href="http://www.artwoo.com/tag/verdant+works" rel="tag">Verdant Works</a> is a restored working museum where jute is still produced today. You can see for yourself how jute was manufactured and learn more about the rise and decline of the jute industry. At its peak over 500 people were employed at Verdant Works. Conditions must have been tough for the workers because the factory is not that large! <br /><br /> It has been said that <a href="http://www.artwoo.com/tag/marmalade" rel="tag">marmalade</a> was invented by Janet Keillor. They had ordered Oranges from Seville which arrived late sometime around 1700 and were very bitter. Janet Keillor managed to make the original recipe for marmalade. Her son then developed the recipe further and made Keillor's <a href="http://www.artwoo.com/tag/jams" rel="tag">jams</a> and marmalades famous throughout the world. <br /><br /> This story is probably not one hundred percent true as some types of marmalade were probably being eaten in Spain and Portugal before this late shipment of <a href="http://www.artwoo.com/tag/bitter+oranges" rel="tag">bitter oranges</a> arrived in Dundee. Marmalade is a sweet sticky condiment that tastes great on toast at breakfast time. It is not to everybody's liking though with many people and especially children who find it unpalatable. <br /><br /> Although Dundee was famous for its jams the number of people employed in the industry was small compared to jute and <a href="http://www.artwoo.com/tag/journalism" rel="tag">journalism</a>. As competition grew in the late 1900s the factory struggled to make any profits. The Keillor factory was bought by the Okhai family in the 1980s but they were unable to make the business profitable and it eventually closed down. <br /><br /> Journalism still thrives in Dundee today. The business owned by the DC Thomson family created many famous characters including Dennis the Menace, Desperate Dan, Billy Whiz and the Bash Street Kids. They publish The Courier newspaper, Sunday Post, Scots Magazine, Weekly News as well as the Beano, Dandy. According to their own figures they publish over 200 million newspapers and magazines each year. <br /><br /> Dundee at its peak had over two hundred thousand people living and working in the city. As the industry has slowly died younger people and especially graduates are leaving to work in the larger cities. Now it has a population of around a hundred and forty thousand. <br /><br /> Dundee is a beautiful place to live sitting on "the Banks of the Bonny Bay." The Law is at the centre of Dundee and was at on point an active volcano. Now you can drive up to the top and from this vantage point see all the four corners of Dundee. <br /><br /> Dundee is a great place to visit if you want to see Scotland. Aberdeen, Edinburgh and Glasgow are all within an hours reach. But with the following preparations, even most discriminating kids will come in for seconds. <br /><br /> 24-HOUR <a href="http://www.artwoo.com/tag/spinach+salad+recipe" rel="tag">SPINACH SALAD RECIPE</a> <br /><br /> Ingredients: <br /><br /> 1 pound Fresh Spinach -- torn in pieces  1 pound <a href="http://www.artwoo.com/tag/bacon" rel="tag">Bacon</a> -- chopped  1 Head Lettuce -- torn in pieces  1 medium red onion -- diced  6 Eggs, Hard-Boiled -- cut in wedges  3/4 cup Mayonnaise  3/4 cup <a href="http://www.artwoo.com/tag/miracle+whip" rel="tag">Miracle Whip</a>  8 ounces Swiss cheese <br /><br /> Directions: <br /><br /> This is a layered salad, don't mix until serving time. <br /><br /> Place prepared spinach in bottom of large bowl, sprinkle with salt, pepper and 1 tablespoon of sugar. Fry bacon crisp; add vinegar, water, sugar and onion; heat to boiling. Pour over spinach. Toss until wilted. Add egg slices, salt and pepper. <br /><br /> Mix remaining ingredients except brandy in small saucepan and heat until very hot. Heat brandy briefly, add to saucepan and ignite. Pour flaming dressing over spinach and toss gently but thoroughly. Serve on warm salad plates. <br /><br /> SHRIMP AND GRAPEFRUIT SPINACH SALAD RECIPE <br /><br /> Ingredients: <br /><br /> 3 pink grapefruit  3 tablespoons wine vinegar  2 teaspoons Dijon mustard  Salt and pepper  1/2 cup vegetable oil  1 tablespoon vegetable oil  1 1/2 pound large shrimp, peeled and deveined  1 1/2 pound spinach, stems trimmed and leaves washed well  1/2 red onion, thinly sliced <br /><br /> Directions: <br /><br /> With a sharp knife, peel the grapefruit, removing all the bitter white pith. Slice about 3/8 inch thick. In a large bowl, whisk together the vinegar, mustard, and 1/8 teaspoon each salt and pepper. Drizzle in 1/2 cup of the oil, whisking to combine. Season the shrimp with 1/2 teaspoon salt and 1/8 teaspoon pepper. <br /><br /> In a large nonstick skillet, heat the remaining tablespoon oil over medium heat. This citrus <a href="http://www.artwoo.com/tag/sorbet+recipe" rel="tag">sorbet recipe</a> served in the hollowed out peels of the orange, mandarin or lemon is the perfect thing to make for a summer celebration. The bright colours of the skins look cheerful, the sorbet is fragrant and refreshing. You can do all the work ahead of time and they can sit in the freezer happily until you need them. Choose whatever fruit is available - mandarins, <a href="http://www.artwoo.com/tag/tangerines" rel="tag">tangerines</a> or <a href="http://www.artwoo.com/tag/clementines" rel="tag">clementines</a> are all delicious, <a href="http://www.artwoo.com/tag/oranges" rel="tag">oranges</a> work very well and lemons can be done the same way, just by adding rather more sugar to taste. <br /><br /> Jane Grigson calls these mandarines givr=E9es and apparently they were <a href="http://www.artwoo.com/tag/all+the+rage" rel="tag">all the rage</a> at dinner parties in the late Seventies. <br /><br /> Recipe for Tangerine Ice <br /><br /> 20 small tangerines (or 10 oranges)  juice of half a lemon  100ml/ 3floz/ =BD cup water  icing sugar <br /><br /> Syrup  250g/8oz/1 cup sugar  150 ml/5 fl oz/2/3 cup water  juice of =BC lemon <br /><br /> Make the syrup by heating the three ingredients over a low heat until the sugar has dissolved. Bring to the boil and boil for 2-3 minutes. Leave to cool. <br /><br /> Grate the zest from half the tangerines or oranges and squeeze the juice. Cut the remaining fruit, horizontally near the top, so they each have a lid. Scoop out the flesh with a small spoon and press out the juice (I used a sieve to do this). The skins must be left in good shape, but as long as they aren't holed you can stuff them back into roundness with the sorbet. You should end up with about 3 cups of juice altogether. <br /><br /><br /><br />Add the <a href="http://www.artwoo.com/tag/grated+zest" rel="tag">grated zest</a>, lemon juice and water to the juice, then taste to see if you need any of the icing sugar. If you over sweeten, you can add a bit more lemon juice to sharpen the flavour again. Remember that frozen ices need more sugar to bring across the flavour than when they are at room temperature, so go for the sweeter end of your taste range when adding sugar. Freeze this in a plastic container. I usually take it out after a couple of hours to beat it with a fork, then freeze again until it is firm. <br /><br /> Scoop all the leftover pulp from the shells so they are clean inside. Chill them and when the sorbet has set quite firm, (but before it is rock hard) beat it again and scoop it into each shell, packing it down quite firmly. Replace the lids, wrap the whole fruit in cling film and freeze again until needed. <br /><br /> I made these for a dinner party and served a rich and intense chocolate cake alongside them. The combination of flavours was stunning, the perfect finish for an elegant meal.
